Bacon

Sadly I discovered today that there is good bacon and bad bacon. Either that or I failed at cooking it. I was craving bacon and pancakes tonight so I went to HEB. There was $2.50 bacon and $5 bacon. All of it had nitrates. And it all looked roughly the same so I got the cheap stuff. HCF brand I think. I knew as soon as I took it out of the package this was weird bacon. Each strip was 1/2 fat and 1/2 meat but wasn't marbled at all, it was a chunk of fat, then a chunk of meat. Very odd and hard to separate into strips. Everyone has been raving about oven baked bacon so I tried it. Tin foil on a cookie sheet. 375 degrees for 15-20 minutes. After 20 minutes it was still limp. 30 minutes and I took it out. Though maybe if I drained it on paper towels it would crisp up. Nope. So then I microwaved it. It did crisp up but was then a light brown color all over and tasted like a bacon flavored shoe. I ate it anyway b/c even crappy bacon is still bacon. But now I know there really is a difference in bacon quality.
